Elegant, Easy, and Cost-Effective Recipes for Impressive Summer Entertaining

Ya’ll. I’ve been on a summer entertaining KICK and I’m LOVING IT! And I’m not even getting stressed out, burned out, or depleted. Even as a projector mom of 3!

I believe the reason it’s feeling so good is because I’ve found a way to do it that honors my values.

Meaning, I don’t serve nasty ass, heavy, unhealthy food.

And I also refuse to spend days on days slaving away and feeling stressed about it.

And I’m also not being ridiculous and spending an arm and a leg.

I’ve found a way to host that allows me to prepare a beautiful, healthy, elegant meal that is cost effective, delicious, low lift and easy to prepare and makes a really impressive spread that everyone enjoys and feels good putting their swimsuit on afterwards!

Oh, and I also only surround myself with people that require no social battery and fill me up! If I feel I need to do hair and make up and a dog and pony show for you, you aint invited. lol

so now lemme share some of the key recipe winners from this last week’s run of entertaining

Greek Chicken Burgers from Holistic Squid

These burgers are straight up crack. And SO healthy. They are loaded with spinach and herbs…and a lil feta.. and taste like the most insane healthy gyro situation you’ve ever had.

They taste so fresh and delightful it’s hard to believe they’re healthy!

Grilled Zucchini with Feta and Basil from Kalefornia kravings

This side dish pairs so beautifully with the greek chicken burgers! It’s light, so tasty and also has that super fresh taste! We have done it with goat cheese and with feta both work really well.

Tomato Crostini with Whipped Feta by Ina Garten

Okay, I know this one isn’t necessarily the most bikini friendly, ya gotta live a lil right? And in small quantities, it’s not only good – it’s worth it!


These crostinis were the star of the show and banging!

I served various arugula salads each day with a lemon garlic vinagrette. One day I put in grilled artichokes, sunflower seeds and shaved parm and the other day it was roasted red peppers, sunflower seeds and shaved parm.

Who said BBQs had to be loaded with hot dogs and heavy!
