Celebrating a low carb Cinco de Mayo has become a delightful tradition for me, especially in the early May warmth of New York. As the weather starts to brighten and everyone gets into a feisty, festive mood, it’s the perfect time to enjoy the best of Mexican cuisine and cocktails, all with a low carb twist!
While I don’t drink anymore, for the most part, I’ve always loved tequila, not only because it’s an upper versus depressing Vodka, but it’s got lower carbs and sugar than it’s alcohol based friends. Palomas were my go to drink for years, as they’re super refreshing, while putting you in a festive state, if ya know what I mean. 😜
