Paleo Slow Cooker Meatballs

Meatballs are a crowd pleaser in our house. They’re soft enough for babies and toddlers to enjoy, but hearty enough for Daddy to enjoy!

What I love about this recipe

What I love most about this meatball recipe is that it takes less than 20 minutes to prep and then the slow cooker does the rest! #winning Ease always wins with this busy mama!

But what comes in close second, is the fact that these meatballs have cauliflower snuck inside that you can’t taste. I mean, how genius is that?! You know I’m always looking for ways to sneak veggies in to make every meal as nutritious as possible for both myself and the kiddos!

How I build my plate and why

The way I build my bowl is by putting a layer of baby spinach down, followed by zoodles and then top with meatballs. I added some roasted cauliflower and I was set! I sometimes add avocado for added healthy fats, but today, this was all I needed.

As you know, I always strive to have my plate be 70% veggies! By doing this, you can ensure you’re getting optimal nutrition, leaving you feeling full and satiated.

Ensuring you have enough healthy fats in each meal is the other critical element, as fat burns fat, supports hormone function, brain function and keeps you satiated. However, I had just had a fat bomb not too long before dinner (oops!), so wasn’t needing additional fat here. Also, the meat have healthy fats in them, so was okay.

Another option for those that are more tolerant to carbs that I am, would be to put it on top of brown rice pasta.

Either way, these are dee-lish!

Paleo Slow Cooker Meatballs

Ingredients

  • 1 pound of organic ground pork
  • 1 head of riced cauliflower
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 beaten egg
  • 1 28 ounce jar of tomato sauce
  • 1 16 ounce can of crushed tomatoes
  • 1 14.25 can of tomato puree

Directions

  1. In a bowl, mix the ground beef, pork, cauliflower, parsley, garlic, onion, and egg. Shape the mixture into 16 meatballs.
  2. In a slow cooker, mix the spaghetti sauce, crushed tomatoes, and tomato puree. Place the meatballs into the sauce mixture. Cook on Low for 6 to 8 hours.
