How to Use Seasoned Meats as Quick Meal Builders

I love to have flavorful meats on hand that can be used to build buddha bowls. When in a pinch, we often cook ground chicken with taco seasoning and sauteed onions and then use that as a base to build a healthy taco bowl with avocado, peppers, onions, and such. We also love making paleo chili and do the same by adding veggies and healthy fats to make a quick healthy lunch or dinner.

What is Keema Matar

I grew up eating Keema Matar, which I like to say is like “Indian Chili”. The meat has incredible flavor as it’s simmered with aromatic Indian spices, making it taste, just heavenly, while not being spicy at all. My 1 and 4 year olds LOVE it! It’s a really nice way to change up flavors and meals with out adding too much work.

I love to enjoy my Keema with roasted cauliflower and avocado to align with my insulin resistant diet, following low carb paleo/dairy free keto diet. This time, I added baby spinach for a base, sauteed mushrooms and onions and roasted cauliflower, making it extremely veggie loaded and nutrient dense.

But, an alternative option would be to enjoy it with rice or potatoes and raita, which is an Indian yogurt that’s made with cumin, coriander and cucumbers. But, have fun with it and make it your own! There’s not wrong way to eat it and I promise you, your taste buds will thank you!

Aside from it being super flavorful & delicious, it’s a nice, quick recipe to add to your rotation, especially if like me, you like to try to introduce yourself and your kids to different flavor profiles.

Mamas, we can prevent our kiddos from being picky eaters! The more we introduce our kids to different flavors, again and again, the more they’re able to appreciate unique flavors. Apparently, it takes trying a food 10-12 times with a child before they can decide if they like it or not. It takes time for them to experience the smell, flavor, texture, and experience of each foods. If they don’t like it the first time, keep trying!

Either way, you’ll be happy either way because if the kids don’t take to it, it means more for you and you will be very excited!

Keema Matar Recipe

Paleo, AIP Protocol & Keto Friendly

Ingredients

  • 4 tbsps ghee
  • 1 onion, finely chopped
  • 2 tsp crushed garlic
  • 1tbsp grated ginger
  • 1tsp ground cumin
  • 1tsp ground coriander
  • 1/4 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cayenne pepper
  • 200g chopped tomatoes
  • 4tbsp coconut milk
  • 1.25 lb ground beef or turkey (or any minced meat)
  • 1.25 tsp salt
  • 250ml/8oz water
  • 2tbsp lemon juice
  • 150g/5oz fresh or frozen peas

Instructions

  1. Put the oil in a large frying pan over a medium-high heat. When hot, add the onion, garlic and ginger and stir until lightly browned.Add the cumin, coriander, turmeric, cinnamon, nutmeg and cayenne pepper and stir for 10 seconds.
  2. Stir in the tomatoes and coconut milk. Cook on a medium-high heat until the tomatoes have softened.
  3. Add the mince and salt. Stir for two minutes, breaking all the lumps. Stir in the water and bring to a simmer, then cover. Turn the heat to low and simmer for 30 minutes.(I tasted it at this point and thought it was completely bland – so I added some dried chilli flakes for a bit of heat).
  4. Add the lemon juice and the peas and cook gently for 10 minutes. (If you want to retain any colour or flavor in your peas, they shouldn’t be cooked longer than a minute or two – I just simmered it for a couple of minutes before taking it off the heat. I also added some fresh coriander for more flavor).
  5. Enjoy!
