I just love Cinco de Mayo! Since it falls in early May, in New York, it’s always when the the weather is starting to warm up and people are feeling feisty and festive, myself included!
In addition to the weather being absolute perfection, Mexican food and cocktails are truly the BEST!
While I don’t drink anymore, for the most part, I’ve always loved tequila, not only because it’s an upper versus depressing Vodka, but it’s got lower carbs and sugar than it’s alcohol based friends. Palomas were my go to drink for years, as they’re super refreshing, while putting you in a festive state, if ya know what I mean. 😜

Main Course
For the main course, these two Mexican recipes have been in our rotation for years and are always home runs.
These Chicken Fajitas via Cafe Delights are INSANE. We use chicken thighs and the marinade is so good that we now use the marinade for chicken for salads and really anything!
These low carb, zucchini based, Chicken Enchiladas Via skinnytaste.com are also amazing and super guilt free! We don’t pile on as much cheese and replace the sour cream with plain greek yogurt and it’s beyond!
